Harvest is a special time of the year, as we bring ripe bunches of fruit off the vine and into the barrel, and begin to anticipate how the finished wine will express itself after fermentation. At the Singlefile estate vineyard, our team gathers very early in the day to handpick chardonnay and pinot noir, enjoying brunch together once the pick is complete.
In this recipe, we've been inspired by the pictures of ripe bunches in the early morning light that the team has been sending through; resulting in creating a Harvest Tart, celebrating beautiful early-autumn flavours. Enjoyed for brunch by our Perth team, we found it to be a perfect pairing for our NV Run Free by Singlefile Serendipity Cuvée.
