Watermelon Salad with Feta & Cucumber

- 1/2 watermelon, peeled & chopped
- 1 continental cucumber, cubed
- 15 fresh mint leaves, roughly chopped
- 15 fresh basil leaves, roughly chopped
- 1/2 cup feta cheese, crumbled
- ~ FOR THE DRESSING ~
- 2 tbsp runny honey
- 2 tbsp lime juice
- 1-2 tbsp (to taste) quality extra virgin olive oil
- pinch of salt (to taste)
In a small bowl, whisk together the honey, lime juice, and olive oil until well combined. Add a pinch of salt and whisk again, ensuring the flavours meld together for a bright and balanced dressing. Set aside to allow the ingredients to infuse while you prepare the rest of the salad.
Arrange the watermelon and cucumber on a large serving platter, and scatter with most of the chopped herbs (reserving some for garnish).
Just before serving, drizzle the prepared dressing evenly over the salad. Gently toss everything together to coat the fruit and herbs without crushing the delicate ingredients. Finally, crumble the feta cheese over the top for a creamy and salty contrast, and scatter with reserved herbs. Serve immediately for a refreshing and flavourful dish.
Optional Extras: For added complexity, add some thinly sliced shallots or red onions for subtle sharpness. If you enjoy a bit of heat, finely chopped fresh chili or a sprinkle of red chili flakes will bring a warm, spicy contrast to the cool sweetness of the watermelon. For extra creaminess, you can add some diced avocado, which pairs beautifully with the lime dressing and feta.
