The allure of a slow roasted ham that melts off the bone never fades. This Irish Christmas ham recipe has been devoured by the Corbett family for nearly 50 years. Source an impressive leg of ham with a thick, even layer of fat. Whether it is sliced thinly or served in generous portions, the flavours in this ham will render it difficult to leave the table. Ingredients
  • 1 half leg of ham (nice thickness of fat under the skin)
  • 2 bottles of sweet cider
  • 2 egg yolks
  • breadcrumbs
  • cloves
  • olive oil
Directions
  1. Steep ham in Irish cider in a large saucepan for about an hour, then boil for another hour
  2. Leave it all in the saucepan overnight
  3. Next day, preheat your oven to 190 degrees
  4. Remove the cider and the skin off the ham and place the ham in a baking dish
  5. Beat two egg yolks and pour over the ham
  6. Put breadcrumbs all around the top of the ham, then stick all the cloves around the ham
  7. Pour a little oil on the ham and put it in the oven on the middle shelf for an hour or until the ham is browned
  8. Remove from the oven and let it stand before slicing
