Crudo, meaning 'raw', is an ingredient served raw with a dressing, usually made with seafood and a sauce of olive oil, herbs, and citrus or vinegar. It is dressed and served immediately, so that the dressing does not 'cook' the protein, but lets the flavour and texture of the raw seafood shine.
The recipe we have created uses beautiful, sashimi-grade salmon, with a vibrant and gently spicy dressing of coconut milk, lime and basil. Served with Singlefile's Great Southern Riesling, the wine and dish are a match made in heaven. The subtle texture and minerality of the wine perfectly complement the richness of the fish and coconut milk, while the riesling's zesty lime notes echo the citrus in the dish and cleanse the palate after every sip.
